Stone Crab Festival
We continue the Festival Menu series with an homage to the Florida Stone Crab, which are at their peak season in the winter months.
Brownish red with a very hard "stone-like" outer shell, Stone Crabs inhabit the bottom of low bays and reefs, hiding in the rocks from octopuses, sea turtles and other predators. Their meat is sweet from a diet of oysters and small mollusks. Interestingly, Stone Crabs do not die when their claws are harvested, but re-grow the limb in a process known as a "retread."
Our premium Stone Crab claws come from the rich, wild Florida Keys, where the Gulf of Mexico trades waters with the Atlantic, creating a superb native crab micro-climate. Last year storms hindered the harvest, so the sea beds abound with these delicacies, ready to be enjoyed in creative culinary interpretations.
Morgan's Stone Crab Festival runs through February 1, so join us before they're gone for another year!
