For centuries, trained pigs have been harnessed to sniff out these incredible edible gems of the underworld, which grow in symbiotic harmony with oak and hazelnut tree root systems. The Black Truffle explodes with flavor in January, the peak of its season when the trees are in their winter dormancy.
